- 250gr black-eyed beans, dried
- 2 spring onions, chopped
- 1/2 bunch dill, chopped
- 2 roasted red peppers from a jar, chopped
- 100gr smoked eel (or smoked salmon, trout, tuna)
- 4 Tbsp olive oil
- 4 Tbsp vinegar
- salt, pepper
Boil beans until tender. Drain and set aside to cool.
In a bowl combine beans and the rest of the ingredients. Toss to mix.
