Quinoa Pizza Crust with Herbs


ingredients for crust
  • 1/2 quinoa
  • 1 cup water
  • 1 egg
  • 1 tsp oregano
  • 1 tsp thyme
  • 2 tsp fresh rosemary chopped
  • 2 Tbsp kefalotyri or pecorino grated
  • 2 bacon slices chopped 
ingredients for tomato sauce
  • 1 cup tomato grated
  • 2 Tbsp balsamic cream classic BRAVA
  • 1 tsp oregano
  • 1 chili pepper chopped
  • 2 Tbsp parsley chopped
  • 3 Tbsp olive oil
ingredients for toppings
  • 5-6 Tbsp kefalotyri or pecorino grated
  • arugula leaves
  • balsamic cream with fig BRAVA


instructions

Place quinoa and water in a pot and bring to a boil. Reduce heat and simmer for 15 minutes until it absorbs water. Let it cool.
In a bowl, stir cooked quinoa with the rest of the crust ingredients until well combined. Line a pan with parchment paper and brush lightly with olive oil. Spread quinoa mixture into a thin layer on the parchment paper.


Bake in a preheated oven at 220C for 10-15 minutes until crispy.


To make the sauce, place all ingredients in a medium sauce pan and simmer until the sauce thickens and reduced by half. Spread tomato sauce over quinoa crust.
Top with cheese and bake for a few minutes until it melts.


Garnish with arugula and balsamic cream.
